CHANUKAH, CHRISTMAS AND NEW YEAR’S EVE: HOLIDAY MENUS FROM KACHKA ARE HERE AND OPEN FOR PREORDER
Every day, Kachka’s culinary team is busy baking fresh bread, curing fish or housemade charcuterie, rolling out dumplings, and preparing the dishes beloved from the restaurant for Portlanders to pick up and enjoy at home each night. In addition to takeout dinner menus available to go, or delivery via CCC PDX, Kachka’s deli and grocery, Lavka, is open all day, everyday, for pickup of chilled and frozen dishes, meal kits, and grocery and specialty items for pantry stocking. And this holiday season, Kachka has designed festive menus and meal kits to make Chanukah, Christmas, and New Year’s Eve meals at home as celebratory and special as possible.
Chanukah
Celebrate the Festival of Lights with Kachka’s Latke Party! Each latke party for two contains platter of twelve crispy potato draniki with an assortment of toppings (roasted applesauce with toasted coriander, maitake mushroom gravy, smoky eggplant ‘caviar,’ truffled farmer’s cheese spread, smetana and chives), endive salad with creamy tarragon dressing, a dreidel game with instructions, and a chocolate gelt.
Each two person Latke Party is $60, with an optional add-on of assorted house cured seafood (smoked black cod, beet horseradish cured salmon, and steelhead roe) for +$30, or 1 oz. of Tsar Nicoulai Estate White Sturgeon Caviar for +$30.
A la Carte Offerings for Hannukah:
House Smoked Brisket
Rubbed with coriander, caraway, dill and black pepper. Smoked low and slow for eight hours until it is fall-apart tender. $23/lb
Apple Ponchiki Kit
Make Kachka’s hot apple donuts (pictured below) at home with this kit. These fritters are filled with chunks of apple and fresh farmer’s cheese before being rolled in thyme sugar. Each kit includes batter and instructions for 12 fritters, and lingonberry jam for serving. $16

Christmas Eve and Christmas
For Christmas Eve dinner, chef Bonnie Morales and her team will be preparing a three-course dinner around ‘Duck a l’orange’ Kurnik, “a celebratory pie fit for a czar.” Kachka’s version includes layers of kumquat studded rice, buckwheat blini, duck confit, duck breasts, duck eggs and more, served with a kumquat duck jus. It’s accompanied by glazed radishes in a honey reduction with toasted caraway seeds. The meal begins with porcini mushroom soup and finishes with kutya parfait for dessert (buckwheat custard with dried fruit, topped with burnt honey mousse). $90 for two servings or $180 for four.

Studded with chives and kampot pepper berries. Rolled in sauerkraut flavored walnuts and served with rye crisps. $10/6oz
Smoked Whitefish Stuffed Eggs
Filled with smoked black cod and whitefish salad and topped with chives and house cured salmon roe. $9/6 pieces
Kachka ‘Chex’ Party Mix
The perennial holiday snack favorite jazzed up with some Kachka goodies like puffed buckwheat, adjika seasoning, rye crackers and more. $8/qt
Holiday Cookie Platter
Assorted festive Russian cookies.Some examples of cookies that may be included are Khvorost, Korzhiki, Pryaniki, Zephyr, Kozinak, Oreshki. $16/12
Armenian-style Dried Fruit and Nut Platter
Inspired by the array of tantalizing dried fruit platters at markets in Yerevan. This 10” round rattan platter is packed full of only the highest quality dried fruits available. A feast for the eyes and belly.
Take-and-Bake Piroshki Platters
Kachka will be making a variety of these pillowy rolls stuffed with sweet and savory fillings to enjoy hot out of the oven at home on Christmas morning. Each platter will come with 3-4 different varieties of piroshki. Some examples are Vatrushki (sweet farmer’s cheese), Egg and Scallion Piroshki, Estonian Cardamom Rolls, and Latvian Bacon Buns. $24/6

New Year’s Eve
For what is normally Kachka’s biggest night of the year, the restaurant will be emulating that experience for diners to recreate at home, with deluxe Ruskie Zakuski experiences to enjoy with vodka or Champagne, and Caviar Vareniki dumpling kits to plate at home! Kachka To Go is available for order, pick up and delivery nightly from 5-9pm.
(To go orders will be closed on Christmas Eve, Christmas and New Year’s Eve, aside from holiday menu pre-orders)
Kachka Lavka (deli) is open to online and phone orders for same-day pick up or curbside pick up of groceries, deli items, prepared meals, meal kits and grab-and go items every day from 9am-5pm. (Kachka Lavka will be closed on Christmas and New Year’s Day).

About Kachka
Kachka sparked a Russian food revolution when Bonnie and Israel Morales opened their Portland restaurant in 2014. James Beard Award nominated Chef/Co-Owner Bonnie Morales cooks the food of the former Soviet Union, including many dishes inspired by those she grew up eating in her Belarusian family.
