Squid stuffed with pappa al pomodoro (the classic Tuscan bread and tomato “soup”) served over chickpea purée, with tangy salsa verde

Gnocchi finocchiati

Pillowy potato gnocchi in a sauce of fennel milk, light béchamel,
prosciutto toscano and fennel pollen
