La Retorta is made by Finca Pascualete in Extramadura, Spain. The family-owned estate has been making cheese since centuries. The torta-style cheese is made from raw Merino sheep’s milk and thistle rennet. Aged for just over 60 days in their estate caves, this cheese has a soft supple center and a thin firm rind. The small format, weighing approximately six ounces, makes this cheese perfect for serving in the traditional manner, by cutting the top off and spooning out the soft creamy center.

Fiasco Spumante, NV
Made from gently pressed Pinot Noir and harvested early to capture great acidity. This sparkling wine is aged on neutral oak and stainless steel. The perfect wine for your next celebration!
2016 Apolloni L Pinot Gris
Cool climate Pinot Gris sourced exclusively from Apolloni’s sustainably farmed vineyard. Aromatic with notes of peach and tropical melon. Both citrus and stone are present on the palate. Perfect with seafood or cheese.
2017 Apolloni Rose
A beautiful dry rose made from Pinot Noir and Viognier. Beautiful aromas of strawberries, watermelon, and floral perfume. Delicate notes of rosewater and wild strawberry on the palate are bright and refreshing.
Fiasco Rosso, NV
This Italian-style red blend is made primarily from Sangiovese. Fiasco Ross is perfect served with pizza or pasta.
