Kapiti Kikorangi is made in Manurewa, New Zealand. The recipe for this cheese was first created in 1984 by Ross McCallum and Neville McNaughton before artisan cheesemaking had really taken off in New Zealand. Kikorangi, meaning blue sky in Maori, is a natural-rinded triple cream blue cheese. The addition of extra cream when the cheese is being made gives Kikorangi a rich dense paste. Milk from grass-fed cows causes this cheese to be golden in color. The rustic grey rind and evenly dispersed blue veins throughout this cheese give it a striking appearance. Kikorangi is smooth with notes of fresh butter and mushrooms.
