That customer favorite—coniglio alla cacciatora—is back on the menu, the perfect thing to cozy up to on a chill evening. This classic Tuscan hunter-style dish of rabbit braised in vino bianco with savory soffritto, herbs, a touch of tomato, and dry-cured black olives, served with fried polenta, is—in a gross understatement—finger-licking good.
Paolo’s family raises rabbits and they are frequently on the family dinner table, so Tuscan rabbit preparations are close to his heart.
Our new favorite salad—insalata di cicorie—celebrates chicories: Castelfranco, radicchio di Chioggia, frisée, truffled pecorino toscano, tart green apple, walnuts and honey-mustard vinaigrette come together in a happy marriage of flavors. Healthy and delicious, proving that #bitterisbetter!

Chestnut Alert! ‘Tis the season so be on the lookout for lovely chestnut-themed specials, which feature the wonderful marroni (an Italian chestnut varietal) from local farm Cascadia Chestnuts. Think chestnut flour gnocchi or tagliatelle with broccoli rabe and fennel sausage; tortelli filled with chestnuts, herbs & stracchino cheese; or for a sweet take, Paolo’s chestnut budino with quince sauce, or classic Tuscan castagnaccio.
