Welcome to the latest edition of our Wine Finds. This week we go back to the time honored tradition of sharing our love for Txakolina – the Basque slightly spritzy, low alcohol wine that is pronounced Cha-Ko-Lee-Na.
Many of you on this email list will remember the fun Txakparti celebrations we used to host on Alberta Street during the summer street fair. Since large public gatherings are out for this summer, we suggest you stock your own fridge with a few favorite Txakoli bottlings, get yourself a porrõn and celebrate whatever way you feel best during these strange times.

Here’s what’s in the Txakoli 6-Pack:
GORRONDONA Bizkaiko Txakolina White The lovely Gorrondona estate sits on a little peninsula jutting just minutes south of Bilbao and lies in the Bizkaiko zone, one surrounded by the Atlantic Ocean air that imparts the characteristic saltiness to many of these wines. I was fortunate enough to visit Itziar at her lovely winery some years back and the care and precision that goes into making these wines is something extraordinary to observe. Quite different than our typical winery setup, the modernized tanks used to trap the tiny bubbles that make Txakoli so unique stand side-by-side with a very well outfitted science lab where Itziar cultivates her own yeast strains from her vineyards to help the wines ferment perfectly.
This year’s Bizkaiko white has a great balance of sea air, briny notes, lime zest and a wee touch of funk at first. We found by decanting it in the proper Basque style into your glass (that means hold the bottle up high and pour slowly to let lots of air in) gets rid of the funk and brings on the flavor. The porrõn of course will do the same for you. Paired with seared scallops or pulpo off the grill, I think this might be the most perfect seafood-pairing option of the summer.
AMEZTOI Getariako Txakolina White Ameztoi is an estate that has become synonymous with Txakoli in the US, much to the credit of their importer, Demaison Selections, who has spread the gospel about the benefits of drinking Txakoli – namely, it makes us happier humans!
While the wine below is what has garnered Ameztoi so much popularity, I have to say that of all the bottles I’ve tried this Spring in anticipation of writing this email, this bottle of Ameztoi white is my absolute favorite. It’s lightly salty but also lightly sweet with white peach fruit and the level of carbonation is just perfect – noticeable, dances on your tongue, cleans off your palate, leaves you salivating for more. I could drink this with grilled lamb chops, shrimp cocktail, a summer salad with berries and soft cheese or a box of triscuits and velveta and I’d be happy. Can’t wait to share this one with you!
AMEZTOI Getariako Txakolina Rubentis The King of Txakoli, Rubentis was the creation of Ignacio Ameztoi, the 5th Generation winemaker at his family’s estate high in the Basque hills above San Sebastian. The Getariako zone is widely regarded as the best area to grow the native Hondarrabi Zuri (white) and Hondarrabi Beltza (red) grapes, so Ignacio lucked out having a choice vineyard to work with. But his imagination is what created the Txakoli revolution. He decided to make the first pink wine in the region by blending the white and red wines together. Normally, rosé is made by pressing red grapes quickly off their skins to avoid imparting too much color. But instead taking a base of white wine and adding just enough red to it to introduce color and flavor, especially with the unique characteristic of Hondarrabi Beltza, the results are stunning.
The new 2019 vintage of Rubentis is quite dry, and at first I wasn’t loving it. But as bottle after bottle in our fridge has gone empty, I’ve realized that the hints of strawberry and red currant fruit are starting to come out and also that it doesn’t matter what day of the week it is, I tend to reach for a bottle of cold Txakoli whenever possible. If you’re like me, you should grab a case. You won’t have many chances to do that this year as supplies are limited due to world wide events and obviously less restaurants to enjoy this wine at right now. We all hope that will change soon. But in the meantime, get some Rubentis in your fridge and look forward to happier days ahead.
