Imperial Celebrates Everyone’s Favorite Ingredient This January With A Special Truffle Menu Thursday, January 23rd to Friday, January 26th
FOR IMMEDIATE RELEASE – Just in time for the Oregon Truffle Festival, Imperial is excited to celebrate with a special truffle menu the last weekend of January. One of Oregon’s favorite delicacies, the truffle-focused menu from Chef Vitaly Paley and Executive Chef Ben Bettinger will start right before the popular festival and run throughout the next week.
During Imperial Truffle Weekend, the festivities kick off early, starting Thursday, January 23rd and running through Sunday, January 26th. Guests will have the option of choosing a special truffle menu when dining at the restaurant during normal dinner hours. At $75 per person, the truffle menu will include a taste of Imperial’s Hunting Season cocktail (described below), wine pairings, and four courses dedicated to honoring Oregon truffles (gratuity not included). The truffle menu selections will also be available a la carte. Referred to by one French gourmand as “the diamonds of the kitchen,” the menu will feature use the truffles to enhance his signature style of elegant, soulful food.
Bar Manager Brandon Wise, whose cocktail program at Imperial was recently named one of the Best New Bars in the U.S by Food & Wine magazine, has dreamt up a special truffle-inspired cocktail for the occasion. The Hunting Season cocktail includes truffle-infused Aviation gin, Clear Creek Douglas Fir liqueur, fresh lemon juice, sage syrup, Yakima Valley bitters, egg white, and black truffle sea salt and is $10.

Imperial is located in the historic Hotel Lucia in Downtown Portland, showcasing chef-owner Vitaly Paley’s renowned cooking, which helped him earn Portland Monthly’s 2012 Chef of the Year and a 2012 Empire Builder Award by Food & Wine. Chef Paley also received the 2005 James Beard Foundation Best Chef Pacific Northwest award, was nominated as a 2012 and 2013 James Beard Foundation Semifinalist for Outstanding Chef, and was a recent victor on Food Network’s popular series Iron Chef America where he was paired with Imperial Executive Chef Ben Bettinger. Paley, considered the Dean of Portland Chefs for many years, rediscovers Pacific Northwest culinary pathways and follows the footsteps of Oregon’s own James Beard. At Imperial, Chef Paley explores menu ideas that have historic significance and uses cooking methods and ingredients from Oregon’s diverse bounty. The most prominent feature of Imperial’s kitchen is the impressive wood fire grill and rotisserie that incorporates use of native hard and fruitwoods, leading to Huffington Post choosing Imperial as one of the 11 Best Barbecue Restaurants of 2013.
