Combining the taste of the season with the feelings of nostalgia and warmth we all get around this time of year, dishes like Irving Street Kitchen’s seasonal menu, including Warm Beets and Apples, Sweet and Sour Smoked Trout with Applesauce, and General Tso’s Roasted Delicata Squash will transport you right back to the family dinner table.
Warm Beets & Apples: Paired perfectly with walnuts, cubes of Pecorino, and the right amount of heat, the earthy flavor typically found in beets is nonexistent. Chef Sarah has crafted a beautifully sweet and fresh blend of flavors by using heat to highlight the sweetness in the apples and fusing it with the beets’ slightly bitter taste. The bright, roasted winter mix is both hearty and served as a shared plate to have you coming back for more.
Sweet & Sour Smoked Trout: Cut down the middle and served open-face with sliced lemon and flakes of roasted garlic chips, the smoked trout is a dish that is both delicate and packed with seasonal flavor. Topped with house-made black garlic applesauce, the acidity and spice from the lemon and garlic brings out the cinnamon-like notes in the dish and result in a seasonal love affair.
General Tso’s Roasted Delicata Squash: Served with a mix of cashews and toasted sesame seeds, the roasted delicata squash is a playful riff on the classic General Tso’s Chicken, but with the restaurant’s vegan friends in mind. The squash is roasted and then topped with a beautiful plum sauce ensuring that the seasonal fruit is used to its full potential.
