Diane Lam on her pop up at Irving Street Kitchen
“Food has brought me closer to my past. It has enabled me to understand what makes me Cambodian and illuminates my family’s history that can no longer exist in written or oral form. As I do this pop up at Irving Street Kitchen on my Father’s birthday, I celebrate our culture by serving some of his favorite dishes (I made sure to ask for his requests). I realize now, that as I fuse my rigid French training with my family recipes, I am reviving my heritage that was once lost and now found.”
Irving Street Kitchen from Chef/Owner, Sarah Schafer, is now truly a kitchen, the place where everyone gathers and where there is something for everyone. Schafer and team work together to guide guests through approachable expressions of her East and West Coast influences, meant for sharing with friends and family in a cozy, inviting, community-minded space. Schafer is one of Portland’s powerhouse female chefs, hailing from some of the country’s most respected restaurants, including Gramercy Tavern and Eleven Madison Park in New York City.
