Canopy Central, the restaurant at Canopy by Hilton Portland, is spearheaded by Lead Culinary and Drink Enthusiast Sara Woods, one of two female chefs running a hotel restaurant in Portland. She curated a happy hour menu designed to treat locals and guests alike to a Portland-centric drinking and dining experience. The happy hour menu, offered from 4 – 6 p.m., offers local drinks – including Session Lager ($4) from Oregon’s own Full Sail Brewing Company and Pike Road Wine ($6) from Willamette Valley, plus delectable snacks – like a custom Canopy x Ruby Jewel ice cream sandwich collab ($6) (an orange sugar cookie with vanilla ice cream, to match Canopy’s orange logo and branding), kale salad with apples and pumpkin seeds ($5), pork/ jalapeno/provolone nachos and more!
Specialty cocktails round out the menu, like the Kentucky Pit ($7) consisting of bourbon, honey and avid apricot cider or perhaps a Stumptown Honeysuckle ($7) with rum, St Germain, honey and lime.
