A new concept from the top of the Nines at Departure Restaurant + Lounge! Executive Chef Gregory Gourdet will introduce a new cuisine from a specific country or region each month this winter and fall. Compass dinners are for 20 people and will take place in the State Room. These dinners will be small, carefully chosen and based on flavor, culture, technique, and execution. The first dinner will be on Sunday, October 26th, and will cover the flavors of Japan.
