Celebrate dad this Father’s Day at Headwaters as James Beard chef Vitaly Paley teams up with pFriem Family Brewers for a special dinner showcasing one of Oregon’s best producers of craft beer
PORTLAND, Ore. (May 22, 2017) – This Father’s Day, Headwaters presents an exciting multi-course dinner inspired by Belgian style beers from pFriem Family Brewers. Ditch the ties, and give dad something he’ll really enjoy this Father’s Day. James Beard Award Winning Chef/Owner Vitaly Paley and Executive Chef Tim Eckard invite you to join them for a meal that highlights Oregon’s bounty from plate to pint featuring Headwater’s cuisine of local ingredients paired with pFriem’s Belgian brews. Pfriem artisanal beers are symphonies of flavor and balance, influenced by the great brewers of Belgium, but unmistakably true to their homegrown roots here in the Pacific Northwest. The dinner will be hosted on Sunday, June 18th in Headwaters’ Private Dining rooms on the Mezzanine level of the historic Heathman Hotel. Doors open at 5:30 pm for passed hors d’oeuvres and a drink to start.

Headwaters is located in the historic Heathman Hotel in Downtown Portland. In October of 2016 after a dramatic renovation, chef/owner Vitaly Paley, his longtime wife/partner Kimberly Paley and Garrett Peck opened the reimagined dining room at the Heathman Hotel. The property, which possesses a storied culinary history, was constructed in the early Twentieth Century and is a member of the National Historic Register. Chef Vitaly Paley is the third James Beard Best Chef Northwest winner to take the helm of the Portland institution, a long running dining destination in the Pacific Northwest. Named for “the source”, Headwaters showcases local ingredients from Oregon’s diverse bounty, from farm to sea. The approachable menu is an expression and collaboration between Vitaly Paley and Executive Chef Tim Eckard with Pacific Northwest flavors flowing throughout. The chefs pay homage to the rich history of the location, reviving the iconic tea court, adding a Russian flare that speaks to Paley’s own heritage, with a bit of inspiration pulled from his notable pop-up DaNet illustrating pre-Soviet Russian cuisine.
