NEXT MONTHLY CULTURE FEAST: GEORGIAN DINNER AT RAY FEATURING SEAN FREDERICKS OF KARGI GOGO
RAY will be celebrating the flavors of GEORGIAN food in with a special supplementary menu on June 14. Menu will focus on dishes from and inspired by the country of Georgia, including: breads stuffed with cheeses, meats & greens (khachapuri); large boiled dumplings (khinkali); seasonal sides, salads and entrees; Georgian wine, including organic wines made in the traditional 8,000 year-old method. Sean first went to Georgia 8 years ago and has lived and traveled there extensively since that time, cooking in home and restaurant kitchens all over the country.

APPETIZER: Pkhali Trio – spinach, leeks & beets ground with walnuts, garlic, blue fenugreek & coriander
MAIN: Lamb Chakapuli – tender lamb stewed with onions, sour plum sauce, Georgian amber wine and tarragon (Vegetarian option also available)
DESSERT: Roasted seasonal fruit with yogurt, mint and green adjika
OPTIONAL COURSE: (limited amounts will be made) Meskhetian Khinkali – potato & leek dumplings topped with caramelized onions and butter
