SUMMER BOUNTY
As this season ends, we still have ample bounty incoming from our farmers. Let’s explore the versatility of one of our favorite stonefruits: peach!
MARCO’S PEACH CHUTNEY

Yields approximately 1 quart

1½ cups rice vinegar
1½ cups sugar

4 whole peaches, medium dice
2 Fresno chiles, medium dice
Half of 1 white onion, large dice
2 Tbs fresh ginger, peeled and minced
¼ cup golden raisins
2 Tbs mustard seeds
2 tsp red chile flake
2 Tbs garam masala spice blend

½ cup whole leaf herb mix
(equal parts: mint, cilantro,
and Thai basil)

1. Combine rice vinegar and sugar in a medium saucepot over medium heat, until the sugar has dissolved.

2. Add remaining ingredients except for whole leaf herb mix to saucepot. Bring to a boil, then reduce heat to low and simmer for approximately 45 minutes. Stir frequently.

3. Remove saucepot from heat and transfer to a small mixing bowl. Add whole leaf herb mix to the bowl and stir to combine. Cool to room temperature before storing in the fridge.

SHRUBS 101
A shrub is a naturally sweetened drinking vinegar infused with fruit and served in a cocktail punch or with soda. Shrubs are a method used throughout history, effectively preserving seasonal fruit into a medium for use all year long.
The DIY method:

  • It’s 1:1:1 ratio of fruit:vinegar:sugar to achieve the balance sweet to tart. Seize this opportunity to clean out your fridge and experiment with different vinegars (try coconut or champagne) and sugars (demerara or palm). Take one pound of chopped fruit and combine with two cups sugar and two cups of vinegar. Let the mixture sit for at least 24 hours.

Booze-free invigorator:

  • Fill a pint glass with ice and soda water, top with 2 oz of Shrub del Día.

Pick your poison:

  • Do as our bartender Kristianna suggests and spike it with your favorite spirit!
KRISTIANNA’S PEACH SANGRIA
Serves one
1 oz Brandy
½ oz Nectarine Vodka
¾ oz Peach Shrub
½ oz Lemon Juice
1 oz Chardonnay
Shake and strain into your preferred glass with ice.
Garnish with local farm-fresh fruits!
SEABREAM SEASON
It’s back! We’ve got wild-caught sustainable Seabream in from New Zealand. We’ll break it down in-house, dust it with Persian spices and grill it to perfection.
COVID-19 PREVENTATIVE MEASURES

When we reopened, we carefully considered all aspects necessary to keep our staff and our guests safe. We’re proudly following CDC, Oregon Health Authority, and Multnomah County Health Department guidelines. We will remain transparent in our safety efforts. If you have any questions or concerns, feel free to inquire!

  • We kindly ask that you make a reservation*. Give us a call before walking in, and we’ll save you a spot!
  • Wear a mask, it’s required! If you’ve forgotten a mask, we’ll offer one as a courtesy (a visor too, if you like).
  • All tables are spaced six feet apart and thoroughly sanitized between seatings.
  • We have marked floor signs to aid in keeping a safe distance throughout our restaurant.
  • Everyone on our team takes their temperature before beginning their shift. We provide appropriate personal protective equipment to everyone on staff.
  • We appreciate your patience and thank you for your continued support!
*Reservations are requested for contact tracing purposes.
