Shimanek Bridge Farm Goat at Xico
In late Summer and Fall we have the pleasure of butchering, preparing and serving goat from Shimanek Bridge Farm. Our next goat comes today! We have three preparations planned.

a Yucatecan preparation

And finally: Goat barbacoa
a Oaxacan preparation
Goat is marinated overnight in an adobo of guajillo and ancho chiles, toasted sesame seeds and garlic, then roasted under copious amounts of avocado leaf. It’s served with its broth, and fresh tortillas.
About Shimanek Bridge Farm
Shimanek Bridge is a small family farm located along Thomas Creek at the edge of the Cascade foothills near Scio, Oregon. Their name is taken from the iconic Shimanek Covered Bridge which crosses Thomas Creek at the corner of the farm. They practice rotational grazing on roughly 50 acres of pasture, moving animals frequently to maintain soil health, healthy pasture and animals, and to protect water quality. In addition to goats, they pasture raise pigs, turkeys, laying hens, and cattle.
