Vince’s Vegetable Wizardry
We couldn’t be more pleased to welcome Chef Vince Nguyen of Jolie Laide as our guest chef this month. If you’ve only been able to dream of Jolie Laide’s epic 12-course vegetable-forward journeys (named among our city’s best pop ups by Willamette Week and Portland Monthly), you’re in luck. This Friday, you’ll have the rare opportunity to enjoy his brilliant food a la carte.
Rooted in the seasons, Vince’s thoughtful and thought-provoking food is a dynamic study of opposites: minimal yet highly technical, elegant yet exuberant, beautiful but boundary-pushing. Also, the guy is just a genius with vegetables and has a knack for making humble ingredients shine.
Along with signature dishes from Chef Vince (click the button below for a peek at the phenomenal menu), we’ll be shucking fresh NW oysters and Matt from Merit Badge will be raising the bar with his cocktail prowess. We’d love to welcome in the new year with you!
