Lyf Gildersleeve Opens Flying Fish Market, Oyster Bar and Restaurant today, Feb 10th on East Burnside

Second-generation fishmonger Lyf Gildersleeve brings locally sourced seafood to Portland area diners

February 10, 2020 – Portland, Ore. —Portland’s premier sustainable seafood business, Flying Fish Company, opens its stand-alone casual and family-friendly seafood restaurant, oyster bar and fish market on Monday, Feb. 10th at 10 a.m. (with the restaurant opening at 11 a.m.) at 3004 East Burnside. The restaurant, oyster bar and fish market will initially be open daily and will offer lunch and dinner

“Portland needs more quality fish markets and we’re thrilled to expand our operations, continue to support the regional fishing industry and make the freshest and most sustainable seafood available to our Portland customers,” says chef/owner Lyf Gildersleeve.

 

Portland’s New Seafood-Centric Food Paradise

The new casual seafood restaurant features 17 seats along with oyster bar seating for seven and an outdoor fire pit and 24 additional seats outside at picnic tables. Gildersleeve and his culinary team of chef Andre Uribe and chef Erik Englund will feature popular items like beer-battered fish & chips with house made tartar sauce, a weekly “fresh catch” fish sandwich, Louis salad, curried mussels, clam chowder, seafood pasta, garlic herbed clams, Hawaiian-inspired poke, ceviche and freshly shucked oysters on the half shell. Gildersleeve uses his family recipe for smoked salmon available both in the restaurant and to take home from the fish market. Allergen-free dishes, including gluten-free fish & chips, poke, and oysters; and keto and paleo menu options are also available.

 

The restaurant has a full-service bar with wine, beer, and spirits mainly from the Pacific Northwest including Nitro Oyster stout and Dancing Star fruited sour from Yachats Brewing, Rouge IPA from Rogue, Wolves & People Postman, Wayfinder Dortmunder and Son of Man Sagardo cider. Signature cocktails include the Red Snapper with tomato, peppers, horseradish and lime, as well as Fish House punch with rum, apple brandy, crème de peche and lemon.

 

Neighborhood Fish Market

Flying Fish has always been the go-to source for fresh, seasonal fish and now the expanded space is the perfect stop to pick up dinner and Lyf’s popular house-smoked fish. The market will feature the freshest  seasonal catch such as ORA King Salmon, Washington Steelhead, Dungeness crab, Hawaiian Ahi, Tombo Tuna, oysters, clams and mussels.

 

Sustainable Seafood Mission

Lyf has built Flying Fish Company from one neighborhood food cart to a stand-alone restaurant and market on the belief that buying local sustainable seafood is the best solution for our environment, the coastal fishers and his customers. He works regularly with family-owned seafood businesses in the region that need his support to survive, and also care about how their fish is caught and transported. “We’re at a time when the local economy needs our support more than ever,” says Gildersleeve. “Small businesses are the backbone of what creates our economy and by supporting Flying Fish, you’re supporting the farmers, fishermen and employees right here in the Portland area.”

 

About Flying Fish Company

Craig Gildersleeve founded Flying Fish Company in Sandpoint, Idaho, in 1979. His son and second-generation fishmonger, Lyf Gildersleeve, owns and operates his own branch of Flying Fish in Portland. Lyf has spent his entire life around fish, including an aquaculture education at the Harbor Branch Oceanographic Institute in Florida. His mission to source and curate the highest quality local, seasonal, sustainably harvested ingredients available in the market led him to Portland in 2009. That year, he opened a fresh fish food cart at the D Street pod on Division Street. In 2011, Lyf and his growing team opened the fish shack on SE Hawthorne Boulevard, and in February 2016, they moved all their operations to Providore Fine Foods. Flying Fish’s current location is at 3004 East Burnside Avenue, Portland, OR. Hours are Sunday-Thursday, 10 a.m.-9 p.m., Friday & Saturday, 10 a.m.-10 p.m., CLOSED TUESDAY.
