Flying Fish Co. expands with new restaurant, oyster bar, fish market

Flying Fish Company Announces New Fish Market, Restaurant, and Oyster Bar Opening Spring 2020 in Prime Location on East Burnside.

Second-generation fishmonger Lyf Gildersleeve kicks off crowdfunding opportunities with GoFundMe and KIVA to help bring sustainable, high-quality seafood to more Portland customers

PORTLAND, Oregon – November 8, 2019 — Portland’s premier sustainable seafood operation, Flying Fish Company, announced it plans to open its own brick-and-mortar seafood market, restaurant, and oyster bar at 3004 East Burnside Avenue. The location, currently home to The People’s Pig, will undergo renovation this fall and winter and reopen as Flying Fish Company in early spring 2020. In late December, Flying Fish Company will leave its space at Providore Fine Foods, after almost four years as one of the original tenants.

Beginning with Flying Fish’s early days as a food cart on SE Division Street, then a fish shack on SE Hawthorne Blvd., to the stand-alone oyster bar and market at Providore Fine Foods, this next move represents a natural progression for the company, according to owner Lyf Gildersleeve. “Relocating to our own building will allow us to offer our sustainably-sourced seafood to even more customers and open our first full-service restaurant, plus make room for our fish market and popular oyster bar,” said Gildersleeve. “Portland needs more quality fish markets and we’re thrilled to continue to support the regional fishing industry and make the freshest and most sustainable seafood available to our Portland customers.”

 

Portland’s New Seafood-Centric Food Paradise

The new fast-casual and family-friendly restaurant will have indoor and outdoor seating, and serve a seasonal menu of popular items like fish & chips, fish sandwiches, grilled salmon salad, clam chowder, cioppino, steamed clams and mussels, Hawaiian-inspired poke, ceviche and freshly shucked oysters on the half shell. Gildersleeve will use his family’s own recipe for smoked salmon available both in the restaurant and the fish market. The restaurant will also have a full-service bar with wine, beer, and spirits from the Pacific Northwest; allergen-free dishes, including gluten-free fish & chips; and keto and paleo menu options.

 

Crowdfunding Campaigns Launch in early November

Flying Fish Company is seeking customer support for this project through multiple crowdfunding platforms, where people can:

  • Donate to the project online at GoFundMe
  • Purchase your holiday gift cards online via Square and in person at Flying Fish Co at Providore Fine Foods (through Dec. 31).
  • Invest any amount through KIVA and it will be repaid over time (Link coming soon).
  • Shop at Flying Fish daily and support the family business.

Craig Gildersleeve founded Flying Fish Company in Sandpoint, Idaho, in 1979. His son and second-generation fishmonger, Lyf Gildersleeve, owns and operates his own branch of Flying Fish in Portland. Lyf has spent his entire life around fish, including an aquaculture education at the Harbor Branch Oceanographic Institute in Florida. His mission to source and curate the highest quality local, seasonal, sustainably harvested ingredients available in the market led him to Portland in 2009.
