Ferns’ Edge Dairy – Mt. Thielsen
Ferns’ Edge Dairy is a farmstead creamery located in the foothills of the Cascade Mountains, in Lowell, Oregon. The creamery was established in the 1970s by Shari Reyna and Fred Warner. Shari and Fred make their cheeses using the milk from their own herd, which rely on a grass based diet that is supplemented with non-GMO feed. In addition to making lovely goat’s milk cheeses, Ferns’ Edge Dairy is the only dairy certified to sell raw goat’s milk in the State of Oregon. One of our favorite cheeses from Ferns’ Edge Dairy is Mt. Thielsen. Named after an extinct mountain in the Cascades, this cheese is an alpine style, made using cultures found in French Comte recipes. With notes of citrus and almonds this cheese is the perfect addition to your next cheese plate or shaved on summer salad.

Summer Sippers Wine Tasting

The first day of summer is just around the corner and we are ready with three delightful, easy drinking wines for our Thursday tasting. Here’s this week’s line up:
2018 Quintas das Arcas, Arca Nova Vinho Verde Bianco, Portugal
Vinho Verde is Portuguese classic that is perfect for summer picnics and barbecues! It is made from a blend of Loureiro, Arinto, and Tradjadura, regional varietals from the Minho provence in northern Portugal. Notes of green apple and citrus compliment the wine’s soft minerality. Pair with salads, seafood, and poultry
2018 Ca’Montebello, Pinot Nero Bianco Frizzante, Oltrepo Pavese, DOC, Lombardy, Italy
This straw yellow wine is made from 100% Pinot Noir grapes. After a gentle pressing the juice is allowed to rest for 24 hours. Fermentation takes place in stainless steel vats. Before bottling re-fermentation takes place creating a slightly effervescent wine. Notes of golden apple can be found on the nose, on the palate notes of stone fruit is complimented by gentle bubbles.
2018 Chateau Miraval, Studio Rose, Provence, France
Studio Rose is made by Chateau Miraval in Provence, France. A blend of Cinsault, Grenache, Rolle, and Tibouren grapes make up this pale pink rose. Crisp and refreshing with notes of white flowers, citrus, and a touch of salinity. Perfect paired with a lemony goat’s milk cheese or a little sunshine.
