What to do with end of the summer tomatoes?
CHEF JOSE’S TOMATO JAM Make the most of your end of season tomatoes by making tomato jam and keep a little summer in your fridge for the rainy months to come. Perfect for matching with sheep’s cheese for a charcuterie board or adding some fancy to your favorite grilled cheese.
YIELD 1 QUART
IN SAUCE POT ADD:
1000 gr tomatoes, quartered
300 gr sugar
peeled zest of one lemon and one orange
1 vanilla bean, scraped
2 cinnamon sticks Simmer everything until tomatoes break down and cook completely Remove zest, vanilla bean, cinnamon sticks, and blend with immersion blender
