Portland, Ore. (July 27, 2015) — In celebration of National Oyster Day on Aug. 5, The Heathman Restaurant & Bar, Portland’s iconic French restaurant, will kick off its inaugural Oyster Month. Beginning Aug. 1, executive chef Michael Stanton will feature 31 different oyster dishes for diners, offering a new preparation each day.
Oyster lovers can indulge each day with a unique oyster recipe or enjoy in Stanton’s specialty oyster packages, enticing guests to shuck, slurp and sip throughout the month.
― Half & Half: Diners can revel in Oyster Month with a half dozen oysters on the half shell with a half glass of sparkling wine or rosé.
― Oyster Flight: A half dozen oysters prepared three ways accompanied by a half glass of sparkling wine or rosé.
― On the half shell, mignonette, cocktail
― Crème fraîche, caviar, green onion
― En Gelée, melon, yuzu, sea salt
― Oyster of the Day: Half dozen oysters prepared a different way for 31 days including Oysters Bánh mì, Po Boy Sliders and Croquette, among others.
“We wanted to create a menu highlighting the delicacy and versatility of the oyster, one of the most under-celebrated fruits of the sea,” said Stanton. “Oyster Month was designed to appeal to every customer and encourage diners to experience different oyster preparations.”
