La Clare Family Creamery is a family owned and operated creamery located in Malone, Wisconsin. Larry and Clara Hedreich purchased the farm as a hobby in 1978. Today, the couple and their five children all work for the family creamery. La Clare makes cheeses from the milk of their 800 goat’s as well as from the cow and goat’s milk of neighboring farms. Although they make a number of cheeses, Evalon is the showstopper. Evalon is made uniquely from raw goat’s milk sourced from La Clare’s own goats. Aged for a minimum of five months, Evalon has a firm yet creamy paste. With notes of brown butter, caramel, and citrus, this cheese would be a great addition to your next cheese plate or grated over pasta or a salad. Come down to the shop and try this Wisconsin original!
