Last year’s gorge fires have led to a bountiful morel harvest, but at great cost, and with rampant global warming, who knows what this fire season will bring? The Fireside is serving morels this month, with proceeds to be donated to the Wildland Firefighter Association to support firefighters and their families. These morels have been generously donated by Foods in Season, who have spearheaded this fundraiser. We sauté them with shallots in foie gras butter, and they are amazing! Add a side to our prime rib, steak or roast chicken, stuff them inside our French dip, or just enjoy them as a side on their decadent own. They won’t last forever!
