My name is Anna and I am the Chef/Owner of a new Vietnamese pop-up call Doi Dua. My business partner and I wanted to reach out to you and all other food blogs and forums to tell you about us! We just started doing Pop-ups at the beautiful, James-beard nominated kitchen Lang baan a couple month ago. We are so stoked to be working at this beautiful space! By reaching out I thought it would be a perfect way for us to introduce ourselves to the foodies in Portland and those traveling here.
So a little about us, I am a chef who moved here last summer from Washington, D.C. where I worked at Rose’s Luxury. I have done some very close work with Bon Appetit and was lucky enough to be on the cover of the September issue as Rose’s won Best New Restaurant of 2014. My partner Sarah Bui and I met over the summer and have been traveling around, meeting people and collecting recipes for our concept. Sarah, prior to moving to Portland, studied Professional Photography in California, and received a Bachelors in Fine Arts with an emphasis in food. She draws culinary inspiration from her Asian heritage, as she aims to preserve the dishes and techniques learned from her Southern Vietnamese family. We opened Doi Dua about four months ago.
What we do at Lang Baan is really special, we are so passionate about food, quality and service. We want to raise the bar on Vietnamese dining in Portland. It is a beautiful cuisine, fresh ingredients, flavorful light broths, sweet and hot, acidic, I truly believe when you have the perfect Vietnamese dish it is able to highlight all five flavor senses. And also the French influence on Vietnam introduced different flavors and ingredients the country and that has pushed the limits to unique and corresponding flavors.
Anyway! We are so happy about this new venture at Lang Baan! And want to spread the word!
