Back By Popular Demand, Chef Gregory Gourdet Prepares Peking Duck All December Long at Departure
PORTLAND, OREGON (December 2, 2014) – Departure Restaurant + Lounge is excited to announce the return of Chef Gregory Gourdet’s Peking duck all December long. Peking duck, one of China’s national foods, is prized for its crispy skin and Chef Gourdet will be serving whole ducks prepared in the traditional Peking style in celebration of the holidays all month long.
Chef Gourdet begins with curing the duck overnight in 7 spice (cinnamon, star anise, allspice, coriander, clove, nutmeg, fennel and chili) salt and sugar. The duck is then dipped in a blanching liquid of rice wine, honey, salt and more 7 spice. Each duck is then hung for 24 hours to dry the skin and concentrate the flavor. Finally, the duck is roasted for an hour and flash fried to order achieving a perfect balance of plump, savory, tender meat and crispy skin. Chef Gourdet presents the whole duck to your table before returning to the kitchen to be carved.
Each Peking duck is served with mandarin pancakes that arrive to your table warm from the steamer along with the traditional garnishes of cucumbers, sliced scallions, and pickled kumquats as well as housemade plum and hoisin sauces to spread on the pancakes and make mini wraps. Chef Gourdet takes any leftovers and makes duck meat and duck fat fried rice to be served as a final course. Available during the month of December, Departure’s Peking duck serves two to three people and is $85 including all accompaniments. The ducks are prepared in limited quantity nightly, and Departure suggests that guests pre-order the duck when making reservations.
