On Thursday, December 7th at 7PM, Gabriel Pascuzzi, chef/owner of Stacked Sandwich Shop, is going back to his roots to create an Italian meal inspired his Calabrian heritage, weaving together dishes he grew up eating and techniques he’s learned along the way.
“I come from a big Italian family, so the holidays are chaotic—but in the best way possible,” says Pascuzzi whose grandfather also Gabriel, immigrated to Oregon in 1914. “The inspiration for this dinner is channeling the tradition of big family gatherings while drawing from childhood memories in the kitchen and new experiences I had traveling as a young chef throughout Italy.
Upon arriving to the states, Pascuzzi’s grandfather planted his family’s roots in Portland, quite literally. He built their home from the ground up and planted an impressive garden that Pasquale Pascuzzi (Gabe’s father) still maintains today. Infact, many of Stacked’s summer fruits and vegetables are sourced from the property. The Pascuzzi patriarch, affectionately referred to as the “Old Tomato,” was a highly respected master gardener. “He would take annual family trips back to Italy and return with seeds so he could test which varieties grew the best in Portland’s climate,” says chef Pascuzzi. “Eventually seed makers across the states started sending him different tomato seed varieties to grow and then seek his feedback,” he adds.
For this very special dinner, Stacked Sandwich Shop will close early for the evening and the restaurant will transform for the family style supper with one long table down the center of the space. The open kitchen will make for a lively evening with a guest winery pouring wines by the glass and cocktails available a la carte.
