Dame Collective Launches Chefs-In-Residence with New Concepts Estes and Pasture

Open nightly, Dame Collective becomes home to highly personal pursuits, from the natural wine program to curated menus from featured chefs-in-residence

PORTLAND, Ore. (February 26, 2019) – The newly launched Dame Collective features chefs-in-residence, with thoughtful service, focused natural wine list and bottle shop. Dame Collective owner Jane Smith has envisioned a creative new restaurant model, collaborating with new chefs, burgeoning restaurant concepts, and winemakers. Open every evening, Dame Collective invites chefs into the kitchen for extended residencies, curating dinner menus and collaborating with Dame’s natural wine program. Dame Collective launches with two brand new restaurant concepts, Estes from Executive Chef Patrick McKee (formerly Perlot and Paley’s Place), and Pasture from Chef-Butcher-Owner Kei Ohdera and Chef-Butcher-Owner John Schaible (formerly Farm Spirit and Blue Hill at Stone Barns). Estes is open Sunday through Wednesday, and Pasture is open Thursday through Saturday at Dame Collective. Dame’s elegant design, elevated service and wine program offer a creative environment and platform for the chefs. From the wines lining the shelves in Dame Bottle Shop, to the chefs leading nightly dinners in the restaurant, Dame Collective has created a unique and welcoming community where quality food and natural wines are the focus.

Estes is born from Italian family roots, seasonality and technique. Chef Patrick McKee founded the restaurant and is formerly the Executive Chef at Perlot and a 10-year veteran of landmark Portland restaurant, Paley’s Place, where he worked alongside his mentor, James Beard winning Chef Vitaly Paley. Named for his mother, Estes is rooted in straightforward personal cooking. Growing up, Sundays meant gathering together for family-style dinners of lasagna, spaghetti and meatballs, polenta and beef tongue, with Frank Sinatra or Dean Martin on the stereo. McKee uses these memories, his mother’s recipes and his Italian heritage as the foundation for Estes. McKee’s time spent staging at Arzak in Spain and cooking at Paley’s Place, where he honed his technique and learned the importance of cooking seasonally, also inspired Estes’ vision. Estes is open Sunday from 5:30 to 9pm and Monday through Wednesday from 5:30 to 10pm at Dame Collective.

Founded by Chef-Butcher-Owner Kei Ohdera and Chef-Butcher-Owner John Schaible, Pasture is a whole animal butcher and restaurant that utilizes local agriculture and ethical animal husbandry to craft Cascadian cuisine. Most recently chefs at Farm Spirit, Ohdera and Schaible originally met at the esteemed Blue Hill at Stone Barns, where they worked alongside their mentor, James Beard winning Chef Dan Barber. Through this new concept, Ohdera and Schaible seek to raise awareness of the flavor and quality that comes with animals raised on pasture through regenerative practices. Featuring a menu of incredible products including often overlooked dairy cows, Pasture works closely with their numerous farmer and rancher partners to provide Portland with high-quality and honest food. Pasture is open Thursday through Saturday from 5:30 to 10pm at Dame Collective.

Tucked inside the Collective, Dame Bottle Shop offers an intimate environment to discover and learn about wines from around Oregon and across the globe, including natural wine industry leaders and exciting up-and-comers. The retail shop features wines that are sourced from small producers farming ethically with minimal manipulation in the vineyard and winery. Dame hosts frequent events and winemaker tastings where you can meet winemakers in a casual setting. Hosted in the restaurant, winemaker tastings feature personal wine pours by each winemaker, by-the-glass takeovers, special flights and bottles to go at bottle shop prices. Dame Bottle Shop is open daily from 2pm to close.

French Laundry basic chefs tasting menu is $310 pe French Laundry basic chefs tasting menu is $310 per person but there are add-ons and whatnot that can increase it further. And alcohol, in this case a2097 Comtes Champagne. It does include gratuity. We tasted every dish on the menu Plus many more that they bring out in between courses. Took about 3 1/2 hours to eat
