Barnburner and Queen of Corona

Who would have thought thirty feet below the streets of Brooklyn you could fine a classic cheese aging cavern?
In what was previously the lagering tunnels of Nassau Brewery,which laid dormant since the early 1900s, you will find Crown Finish Caves. The tunnels hold around 50 degrees year-round, the perfect temperature for aging cheese. Crown Finish receives cheese at approximately one week of age and begin their affinage process to impart unique flavors on these blank slates. Working with producers from all over the US and Europe, Crown Finish’s portfolio includes cheese from already celebrated creameries such as Springbrook Farms, Consider Bardwell Farm, Quattro Portoni and more.
Barnburner is made with raw cow’s milk at Grafton Village Cheese and smoked for two hours. Bandaged and rubbed with lard from local butcher shop Marlow and Daughters, the cheese is aged in their caves for a minimum of 4 months. This bright orange cheese defies your expectations of an aged smoked cheddar, bursting with nutty, sweet flavor and yet subtly rich and buttery at the same time.
Queen of Corona originates from Spanish creamery Corcuera, known mainly for their Manchego. This goats milk cheese is shipped to Crown Finish basically fresh and is given a special spot in the caves where it develops a beautiful grey flor for the 4-6 weeks its ages. The Queen is wonderfully creamy and complex, with earthy notes well balanced by a subtle tang.

 Italian Value Wines Tasting
Thursday, October 3rd 
5:30 to 7:30  
This Thursday we will be taking a tour through Italy. Christina Hug of Banville Wines will be pouring four Italian wines, giving us the opportunity to try a little of what Veneto, Piedmont, and Puglia have to offer. These wines are perfect for sipping on a cool fall evening or pair them with your favorite pasta dish!

  • 2018 Remo Farina, Soave Classico, Garganega/Trebbiano di Soave, Veneto, Italy
  • 2017 Remo Farina, Veneto Rosso IGT, Corvina/Cabernet/Merlot, Veneto, Italy
  • 2017 Franco Serra, Langhe Nebbiolo, Langhe DOC,  Piedmont, Italy
  • 2010 Copertino Cooperative, Copertino Riserva, Negro Amaro/Malvasia, Nera Puglia, Italy

Raclette Night is Back!!
Starting Wednesday October 9th
 
  
 
Every Wednesday until the tulips come up in the spring, we will be doing traditional Raclette service. Starting at 5:30 and going until the cheese is gone!
$7 per plate
Roasted Potatoes, Ham, Cornichons and House Mustard all topped with ooey, gooey Raclette
