What do the chefs behind Portland’s best comfort food eat when they’re at home? One cannot live on cast iron fried chicken and biscuits alone! Ferne + Holly is a new counter-service pop-up from chefs Adam and Jackie Sappington of The Country Cat that features delicious, healthful bowls, toasts, juices and smoothies for breakfast and lunch, Monday through Friday.
Named for Jackie’s grandmother Ferne and mother Holly, Ferne + Holly allows the Sappingtons to bring their skill and passion for flavorful, wholesome, ingredient-driven food to the next level with a menu of lighter fresh fare. Many menu items are made with gluten-free ingredients. This quick-serve, to go concept is inspired from the want to have fresh and healthy food on the go.
Ferne + Holly menu highlights include a selection of bowls such as, Fennel Crusted Salmon with zucchini and cucumber “noodles;” Shaved Vegetable bowl of Brussels sprouts, beets, carrots, kale, collard greens, chick peas, sweet peas, Parmesan, creamy lemon; a selection of Toasts ranging from chopped avocado with “coconut bacon” to marinated peppers and sunny side up egg.
Ferne + Holly also prepares smoothies and fresh juices!
The Cherry Bomb with Cherry Juice, Blackberries, Cherries, Banana, yogurt or Pitch Perfect with Kale, Avocado, Banana, Orange, Parsely, Pineapple, Som Honey Vinegar; fresh juices like Ginger & Mary Anne Apple, Ginger, Lemon, Maple Syrup, Apple Cider Vinegar, with turmeric and cayenne.
