Chef Justin Woodward selected by Michelin star David Kinch to feature in new cookbook

Chef Justin Woodward of Portland’s Castagna has been selected by Michelin star chef David Kinch to feature in new cookbook; Today’s Special: 20 Leading Chefs Choose 100 Emerging Chefs and is the only chef featured representing Oregon.

Today’s Special, released this week by Phaidon, is a collection of recipes and words from emerging chefs each chosen by 20 leading chefs around the world. The result is one hundred “today’s special” menus offering at least three courses with a profile on each of the chefs alongside recipes, photographs and original commissioned essays that shed light on what makes a standout star in today’s culinary realm.

Chef Justin Woodward’s “today’s special” menu offers readers seven dishes to create at home including Oyster with Savory Gelée of Crab and White Soy; Chanterelles, Malt, Wilted Sorrel and Chanterelle Cream; Aged Duck with Sesame Leaf and for dessert Toffee, Pine, Meyer Lemon and Cinnamon.

The book’s themes celebrate mentorship and incredible innovation and resilience the industry has demonstrated in the past year and inspires thanks to the contributions of the most exciting up-and-coming chefs who will sustain and recreate the restaurant industry.

When asked about why he chose chef Woodward, Kinch said: “Justin stepped into some big shoes who he took over Castagna, and he has quietly and efficiently created his own style”. This selection of a Portland chef is certainly a huge accolade; not only was Kinch awarded the coveted three Michelin stars and is also one of the most celebrated of his generation acknowledged to be at the forefront of new contemporary California cuisine, Kinch had, quite literally, the choice of every chef in the world and his choice of five included Chef Justin Woodward.

Foodies also have the opportunity to bring the recipes and stories from the cookbook into their own homes as Phaidon have partnered with industry insider platform Fine Dining Lovers to create a series of virtual events featuring some of the leading chefs in conversation with emerging talent and a collection of restaurant kits have been curated in collaboration with S.Pellegrino for diners to recreate.
