Antica Terra’s in-house Chef Timothy Wastell, has an extensive and unique culinary background. Beginning work at age fourteen as a porter in small family owned restaurants outside of Detroit, passion, dedication, talent and tens of thousands of kitchen hours led Timothy to the helm of some of Portland’s favorite places to dine, including DOC, Firehouse Restaurant, Old Salt Marketplace, and Sweedeedee. At Antica Terra Winery, he sources the very best produce, animals, and fish & forage as seasonally possible. Chef has spent the last twelve years in the Pacific Northwest building menus based on his relationships with those who best and most responsibly harvest our local fields, forests, waters and ranches.
