We’ve brought back an old favorite Rogue Creamery recipe, Flora Nelle Blue, only available this spring and while supplies last.
Flora Nelle Blue is a naturally-rinded, cave-aged blue made with traditional, non-vegetarian rennet and organic pasteurized cow’s milk. It boasts a complex and umami-forward flavor, a firm-yet-creamy texture, and an intricate blue veining pattern. Flora Nelle is named after Rogue President David Gremmels’ grandmother, Nelle.
The flavors of this dense, savory blue cheese are best expressed with milk gathered in early spring, when our pastures are greening up with fresh clover, rye, native fescue, timothy, and orchard grasses.
The wheels showcase beautiful and distinctive blue marbling, making this cheese a stunning addition to a spring cheeseboard, in a mixed green salad, or atop a filet.
