Dear Xico friends,
As most of you know, our founding chef and Xico kitchen matriarch Kelly Myers was dealt a life-changing blow a few months ago. A complication during surgery to repair a brain aneurysm left her paralyzed, with a long and difficult road to recovery. She’s doing great, all things considered; she has projects in the works and exceeds her doctor’s expectations all the time. I hung out with her Thursday, she can walk with a cane now, and her upper right arm works again! But of course, she isn’t here cooking in the Xico kitchen 60 hours a week… at least not yet.
So today we are naming our talented sous chef Kelly Towner our new chef at Xico and it’s emotional as you might expect, but I couldn’t be more excited to have her. She brings 10 years of kitchen management experience, most recently from Allswell and Marlow and Daughters in NYC, and a year working directly under chef Kelly Myers, to the role.
Towner is the perfect fit. I’m beyond grateful to have her and comforted by the fact that Kelly Towner and Kelly Myers have a deeply respectful relationship as chef and sous and we move forward honoring Myers’ vision for our food. Towner is a powerhouse boss and a joy to work with so I’m excited for the restaurant and happy to have both Kellys on board.

Towner’s official first day in her new role is September 13, 2018 but she has been acting as chef since late April when we returned from Oaxaca. Towner’s experience with nose to tail butchery, exceptional palate, and formidable people management skills have kept the kitchen humming for the last 4 months, through our busiest time of year and a pretty crazy roller coaster for all of us here.
The menu at Xico already features more than six dishes created by Towner, and we‘ll always serve Myers’ classics, the dishes that gained Xico its reputation for being one of Portland’s best restaurants.
We still seek Myers’ input on dishes, see her regularly and miss her! If you know her, you know she’s kicking serious a**. Watch for what’s next from that lady.
