CG40 – Sheep’s Milk Cheddar
40 Cantagrullas – sheep cheddar cheese
CG40 or 40 Cantagrullas, is a new Spanish import brought to us by Columbia Cheese. A unique and rare cheese, CG40 is a clothbound cheddar made from raw Castillian sheep’s milk. Castillian sheep are a government protected breed in Spain and produce less milk than other breeds. Wheels of CG40 weigh approximately 40 kilograms (over 80 pounds!), making it the largest wheel of cheese produced in all of Spain. Due to the size of the wheel and the limited milk supply, the United States will only receive 12 wheels each year. CG40 is made by family owned and operated, Queseria Granja Cantagrullas, located in the tiny town (population of 49)Ramiro, Vallodolid about 150 km northwest of Madrid. This cheddar is rich, yet sharp with notes of fresh pineapple.

Stone Circle Cider Tasting

This week, in place of our wine tasting, we will be hosting a brand new cider producer, Stone Circle Cider. Located in Estacada, Oregon, Dan Lawrence has been making cider for just over a year now. Prior to opening his cidery, Dan spent time learning the techniques and traditions of cider making in England. He will be sharing four of his English style ciders with us tomorrow: Farmhouse Dry, Farmhouse Semi-Dry, Farmhouse Sweet, and Farmhouse Sour Cherry.
As usual, the ciders are discounted Thursday night only. See you there!
