Central Formaggi of Sardinia
Central Formaggi started in Acerno over 100 years ago when Agostino Villecco headed over Sardinia after hearing about the great abundance of sheep and goat milk.
In 1974 Efisio and Carmine Villecco incorporated Central Formaggi, preserving the original cheese recipes and tradition since 1912.
The company is now at his fourth generation run by the 2 sons of Efisio Villecco, Jon & Piergiorgio.
At Central preserving the highest quality milk and transforming it to some of the world best cheese is the focus. Therefore, the milk they use comes from small family shepherds where the sheep and goats graze under the sky in a free roaming space and feed on grass and other indigenous wild plants.
This week at Cheese Bar we will be running a special cheese board featuring three cheeses from Central Formaggi. Here is a some information the cheeses featured on the board:
Cafone- A semi-soft cheese made from 100% sheep’s milk. Aged for 15-20 days this young cheese is both sweet and savory, with delicate flavors of spring garlic and cream.
Ca’Briolu- A washed rind semi-soft cheese made from a blend of goat and sheep’s milk. Aged for about 1 month the Ca’Briolu has a very savory full flavored profile.
Moliterno al Tartufo- The original Moliterno that has been made in Sardinia in the last 100 years is aged for 6-8 months, so that the cheese develops its own character before the Black Summer Truffle is injected.

Cheese Bar Pizza Night Begins TONIGHT!
Every Wednesday evening throughout the Spring and Summer we will be serving Sicilian-style pizza starting at 5pm. Each week we will be featuring two pizzas, one meat and one vegetarian, using seasonal ingredients and of course, delicious cheese!
Elena Walch Tasting, Thursday, April 27th, 5:30-7:30 pm
This week we are featuring three wines from Italian Winemaker Elena Walch.
Elena Walch is a leading Alto Adige wine estate, in family hands, and belongs to the elite in Italian wine production, with international success. Encouraging quality and innovation, Elena Walch stood at the head of the Alto Adige quality revolution and has gained local and international esteem for her efforts. The philosophy of the estate is dedicated to its terroir – the idea that wines must be the individual expression of their soil, climate and cultivation in the vineyard – and that this must be maintained according to principles of sustainability and passed on to the next generation. The picturesque single estates of Castel Ringberg and Kastelaz are the heart of Elena Walch’s vineyards, now working on a vineyard surface of 55ha. With sustainability being one of the core values at Elena Walch, the wines reflect the various terroirs they originate from. Finally, with the aim of making only the highest quality wines, Elena Walch has been honored with several national as well as international awards.
Here is what we will be pouring:
After harvest, the grapes are carefully pressed. The fresh must is clarified at low temperatures and then gently fermented at a controlled temperature in stainless tanks. This Chardonnay is straw yellow in color with a fruity bouquet of exotic notes, ripe bananas and light floral aromas. On the palate, the wine is elegant and mild with an interesting finish.
This Schiava is grown on a sunny hillside above the famouse Lake of Kaltern at an altitude of 400m above sea level. Soils are inter-glacial in origin consisting of calcareous and sandy clay. Bright ruby in color with a delecate hint of cherry on the nose. On the palate, it is harmonious and elegant due to naturally mild acidity and tannin with a pleasant bitter almond flavor on the finish. An elegant, fruity red wine with good length.
Traditional temperature controlled fermentation of about 10 days in stainless steel tanks. Malolactic fermentation and maturation in large wooden barrel of French oak. This Lagrein gleams invitingly with its intensive and dense garnet red color. The complex bouquet captivates with discreet spicy aromas, with cocoa together with wild berries and sweet cherries in the background. Distinctive tannin structure, smooth fullness, playful yet rustic elegance and youthful freshness as well as a long, juicy finish classify the palate.
