Castagna Quarantine Cooking – Thai Pork Larb Dinner

August 18, 2020

Castagna Quarantine Cooking: Thai Larb

Here’s to summer!

The hot days of summer are here and Justin is cooking up the perfect meal to enjoy on a steamy summer night!

Thai Pork Larb with Laotian style Crispy Rice Salad

Your meal for two includes:
• Crispy rice salad with pork larb, aromatics and toasted sichuan peppercorn
• Roasted green chili condiment
• Duck egg
• Herb salad with heirloom tomatoes, pickled red onion and summer cabbage
• Pickled mustard greens
• Thai style rainbow sherbet

Wine choices:

Anima Mundi ‘Cami dels Xops’ Sparkling, Spain 2019Spanish sparkling made from Macabeu and Xarel-lo grapes. It’s a pet nat, so the bubbles are fresher and less foamy than standard cava. This meal is fairly spicy and the lively saltiness of these bubbles help cleanse the heat. All from biodynamic grapes! $28.00

Weiser Kunstler, Kabinett Riesling, Germany 2015From the Castagna cellar. Aged off dry riesling with spicy thai food is truly magical, trust us. This wine is insanely rare and i’m offering 3 bottles from our meager stash. Stones, moss and yellow fruit from Wolfer Sonnenlay vineyard  $35.00

Lassaigne ‘La Colline Inspiree’ Champagne NVExtra Brut, Blanc de Blancs. This wine is a spice crusher. Super bright minerally acidity, green apple & grapefruit popsicle, almond paste. This comes from an area known as the Montrachet of Champagne. Small natural producer. Only 3 btls available. $88.00

Colston ‘Biblio’ Momtazi Vineyard, Oregon 2018Basically a very light chilled red (or super dark rose, depending on how you see things.) Pinot Gris/Blanc made with extended skin contact. Chilled ‘redish’ wine is a sleeper hit with spicy food, it’s just hard to find ones this good. And local!! $30.00

Enjoy!
