With the changing of the seasons, elements of nature burst with life. Spring is the period of the year most closely associated with freshness, vibrancy and – here in the restaurant – new and exciting inspiration.
During the month of March, Castagna Restaurant is proudly featuring a $55, four-course menu to entice your palate. Chef Justin uses his creativity to showcase the finest ingredients, with his unique and innovative style. We will be highlighting fresh, seasonal produce such as miner’s lettuce, society garlic and sorrel, to name a few.
Pictured above is our McFarland Springs trout dish, a preview of what our spring menu has to offer. Initially, the succulent trout is smoked with cherry wood then served with a warm, rich potato sauce, accompanied by shavings of turnip, garden-fresh miner’s lettuce, and X.O. sauce.
