New Fall/Winter Menu Celebrates Seasonal Ingredients and Traditional Catalonian Flavors
PORTLAND, Ore. (November 15, 2017) — Can Font Portland, the Oregon variant of the Catalonian-inspired restaurant launches an exquisitely flavorful fall/winter menu. Looking to the forest floor and coast for inspiration, Chef Josep Vidal celebrates seasonal ingredients such as mushrooms, squash, prawns and earthy vegetables.
“Our menu can be defined as elaborate traditional cuisine with a touch of modernism, using high quality, local products while always respecting the principal flavors of the product and highlighting the Mediterranean character of our background,” says Josep Vidal.
The new fall/winter menu features inventive dishes creating rich flavors and colorful presentations. For example, the bright orange Spanish Carrot Velouté is served with a golden Seared Scallop. The velvety textured soup is partnered with a halo of savory buttery mushrooms and then topped with spears of al dente asparagus. Another stunning starter is the Seasonal Lobster Mushrooms and Tender Prawns with chanterelles and garnished with fried cauliflower.
For a classic winter main course, the Oxtail with Potato topped with a garnish of fried beets, grilled leeks and sautéed spinach is a superb choice. The lavish richness of the oxtail is echoed perfectly by its companion Rioja wine sauce. The colder seasons are also a perfect time for indulgent sweets, and the Chocolate with Cinnamon Crumble Crust paired with a meringue raspberry gelée and raspberry coulis abstains from being too sweet with a fantastic crunch and nice acidity from the raspberry components.
