Cabriolait is made in Sleidinge, Belgium from raw, organic Saanen goat’s milk. It is produced by a local cooperative, Het Hinkelspel, that was established during the 1980’s to counter industrial cheese production. The cheese is washed with traditional salt brine, resulting in a pale peach rind. The cheese is dense yet supple. It has savory notes reminiscent of split pea soup and fresh goat’s milk cream. We recommend pairing this cheese with a crisp white wine or your favorite Belgian beer!
