Black Label Alpha Tolman

Black Label Alpha Tolman is back! The Cellars at Jasper Hill Farm in Vermont has created a series called the Black Label program. This program is dedicated to finding cheeses that are showing the highest expression of a their potential. Similar to different vintages of wine, each batch of cheese varies and there are unique aspects, including seasonality and climate, that add to the overall character of each cheese. The Sensory Team at Jasper Hill Farm works within their ripening vaults, constantly caring for the cheeses and observing when a wheel has reached it’s prime. The Sensory Team has identified four specific flavor profiles that are present in Alpha Tolman: Dried Fruits & Herbs, Roasted Meat & Red Wine, Bright & Mineralized, and Toasted Nuts & Carmelized Onions. These descriptions are used to express the flavors that come forward in this particular cheese. The wheel of Alpha Tolman that we just received was made June 18th of 2018. It’s flavor profile is dominated by notes of toasted nuts and caramelized onions, with subtle hints of dried herbs and beef broth. Come down to the shop and try a taste of this exceptional American alpine cheese!

Bubbly Tasting

This week we’ve got bubbles! Tony Raynor of Galaxy Wine will be pouring a selection of sparkling wines from around the world. You will have the opportunity to taste of variety of delicious sparkling wines from Italy, France, and New Mexico. We hope you can join us from 5:30 to 7:30 to try these lovely bubbles.

Here’s this week’s lineup:

  • Ruggeri, “Argeo,” Prosecco Brut DOC, Veneto, Italy
  • Gruet, “Sauvage,” Blanc de Blancs, New Mexico
  • Pierre Sparr, Cremant d’Alsace Brut Rose, Haut-Rhin, France
  • Cleo Chiarli, Brut de Noirs, Rose Spumante, Modena, Italy

As usual, the tasting is complimentary. We hope to see you there!

House Stretched Mozzarella, Burrata, & Fresh Brebis: Summer is finally here, which means we have a lovely selection of fresh cheeses to offer!

Fresh Mozzarella – Stretched in house! The perfect cheese to accompany fresh tomatoes in your caprese salad.

Narragansett Creamery’s Burrata – Weekly shipments arrive Friday afternoons, just in time for the weekend!

Buffalo Mozzarella – An extremely delicious and decadent mozzarella made from the milk of Italian water buffalo

Black Sheep Creamery’s Fresh Brebis – A seasonal favorite that is only available from March through late summer. This rich and crumbly cheese is the perfect addition to any salad or baked in a fruit tart or quiche!
