Andy’s Wine Pairings
Add a bottle (or two) of handpicked wines from our wine director to your Bird Box meal.
Pinot Blanc, Biggio Hamina, 2012, Willamette Valley
Todd Hamina is a jack-of-all-trades when it comes to the wine business. Before starting his own project in 2007, he worked a variety of sales, vineyard management, and winemaking jobs for renowned wineries like Archery Summit, Elk Cove and Patton Valley Vineyards. This Pinot Blanc is unique and delicious for a number of reasons…it spends about 16 months in neutral oak barrel on its lees. This aging regimen gives the wine more body and rounder texture. The unique thing about this Pinot Blanc is that it is 9 years old! The wine still has plenty of peachy fruit but with age, the wine has developed really complex notes of spice, white flowers and ginger. It has the perfect amount of richness and acidity to match with roasted chicken and creamy pasta.
Moulin-a-Vent, Céline et Nicolas Hirsch, 2018, Beaujolais
Céline and Nicolas Hirsch grew up in Alsace (where they met and married) before moving to Beaujolais and founding a tiny 5.5-hectare domaine in 2011. The Hirsch’s farm biodynamically and you can really taste the couple’s passion in the wines they produce. They do all of the work themselves-from grape to bottle- and this is no easy feat seeing as how their vineyards are planted at high densities on steep hillsides. Moulin-a-Vent is one of the most treasured Crus of Beaujolais for its ability to wrap its powerful fruit and a velvet glove. This wine smells of Black currants, raspberry, purple flowers and a little spice. Beaujolais is always our go-to wine for roasted chicken and this one really over-delivers!
All of the meals will include 3-courses, a fancy salad for assembling at home, a protein with sides packed ready for re-heating, and dessert. Each box is designed to be heated at home and will generously feed two humans.
Dishes will vary each week.
All boxes are nut free, but we are unable to accommodate any further dietary restrictions or modifications at this time.
Le Pigeon will be following strict safety procedures, and will offer curbside pickup or will bring the meal to your car.
