Wine Pairing Whites Chardonnay — (Whistling Ridge Vineyard)
Goodfellow Family Cellars — ‘17 Ribbon Ridge, Willamette $22
In 2002, Marcus Goodfellow left his job at the Heathman Restaurant to pursue his dream of crafting Pinot Noir and Chardonnay in the Willamette Valley. We are really glad he did! The Goodfellow wines always have lots of soul and over-deliver for the money. Marcus only makes wine from dry-farmed vineyards which causes the roots to dig deep for water and better express the terroir in which they are grown. This wine is produced exclusively from Whistling Ridge Vineyard in Ribbon Ridge A.V.A. It’s medium weight coupled with pronounced acidity making it a great match for poultry dishes. It smells of green apples, tart pears, flowers and white mushrooms.
Chardonnay — Sigrid —
Bergström — ‘14 Willamette Valley $85
Josh Berström understood that Oregon had the potential to produce world-class Chardonnay when he started making Sigrid in 2006. Every year the wines seem to get more polished and complex. He understands the importance of studying Burgundian methods for producing Chardonnay but does not try to bend them to fit Oregon terroir. This allows him to create a truly unique expression of Chardonnay sourced from the Bergstrom’s three biodynamic estate vineyards. The wine shows Meyer lemon, honeysuckle, sweet herbs, brioche, yellow apples, and so much more….one of the most well-crafted and complex Chardonnays made anywhere.
Wine Pairing Reds Bourgogne Rouge — Roncevie —
Domaine Arlaud — ‘17 Burgundy $38
Domaine Arlaud was the first certified organic and biodynamic estate in their home village of Morey-Saint-Denis. This “bourgogne” cuvée comes from a single vineyard in the village of Gevrey Chambertin, some of the vines were planted in 1964! It is fully destemmed to harness the purity of the fruit and aged in neutral oak barrels. The wine smells of raspberries and blueberries and the crunchy fruit is the perfect contrast to earthy richness of truffles.
Savigny-les-Beaune — 1er Cru Les Serpentières — Dom. Michel Ecard — ‘15 Burgundy $55
Michel Ecard struck out on his own in 2005 after years of working for his father. He believes that wines best express their terroir when they are manipulated as little as possible during the winemaking process. The “Serpentières” Vineyard is considered the top vineyard in Savigny-les-Beaune, it has full southern exposure which ensures the grapes get optimally ripe. Ecard’s vines were planted in the iron-rich soils by his grandfather in the 1930s. The old vines enhance the complexity of the wine and help achieve balance in a warm vintage like 2015. This wine smells of black cherries and plums with wet earth and a hint of oak spice.
All of the meals will include 3-courses, a fancy salad for assembling at home, a protein with sides packed ready for re-heating, and dessert. Each box is designed to be heated at home and will generously feed two humans.
Dishes will vary each week.
All boxes are nut-free, but we are unable to accommodate any further dietary restrictions or modifications at this time.
Le Pigeon will be following strict safety procedures, and will offer curbside pickup or will bring the meal to your car.
