Ben & Andy’s Wine Pairings
Add a bottle (or two) of handpicked wines from our wine team to your Bird Box meal.
Malvasia Secco — Caravaglio — ’20, Salina
Salina is one of the islands in the Aeolian chain located off the coast of Sicily. It was formed by the hardening of volcanic lava. The Caravaglio family is inextricably linked to the “modern” history of the island as they were one of five Spanish families to settle there in the 1500s and begin cultivating crops and vineyards. They have farmed these vineyard sites organically for over 500 years. Malvasia first came to the island through a partnership with Venetian traders and it is grown very close to the sea. You really can taste the influence of the salty Mediterranean breezes in the wine! The grapes are hand harvested from vineyards that stretch over 1,000 feet above the sea then the juice is fermented and aged in stainless steel. The wine smells of tangerines, orange blossoms and sea salt and will be a perfect match to the salad and the saline quality will be great with the pork.
Chianti Classico Riserva — Castello della Paneretta — ’17, Tuscany
The Paneretta Castle dates back to the 13th century and wine has been produced there since 1596. They are located in the Barberino Val d’Elsa subzone which is in the far western part of the Chainti Classico appellation. The estate is about 300 hectares but most of that is woodlands and only 22 hectares are planted to vines. The only red grapes grown are Sangiovese and Canaiolo (a traditional blending grape in the region). The soils at the property are varied but have large portions of galestro which is a metamorphic schist composed of clay and sand that is highly friable (crumbly). This Riserva is a blend of 90% Sangiovese and 10% Canaiolo and is aged in neutral French 3,000 and 5,000 liter barrels. It smells of black plums and red cherries tobacco and spice and has a finish that lasts for a full minute.
All of the meals will include 3-courses, a fancy salad for assembling at home, a protein with sides packed ready for re-heating, and dessert. Each box is designed to be heated at home and will generously feed two humans.
Dishes will vary each week.
All boxes are nut free, but we are unable to accommodate any further dietary restrictions or modifications at this time.
