Andy’s Wine Pairings
Add a bottle (or two) of handpicked wines from our wine director to your Bird Box meal.
Beaune, 1er Cru Les Cents Vignes, Domaine des Croix,
2017, Burgundy, FR, $58
David Croix’s domaine has its heart in the vineyards of Beaune. Few, if any, other domaines make as many cuvées from Beaune’s many 1er Cru vineyards. This is the best of Croix’s Beaune premier crus to drink young. It’s the playful one in the range of premier crus—full of pleasure. A blend of four parcels planted in the mid-1950s and 1960s from both an upper slope parcel planted in brown gravel clay soil (grèze litée) and a lower slope parcel planted in well-drained alluvial soils. In 2017 he used 15% stems in the ferment, and it is aged thirteen months in older oak. It exhibits an expressive bouquet of rose petals, spices and red fruit compote, followed by a medium to full-bodied, fleshy palate with succulent acids and melting tannins. Little Birds and red Burgundy are always a great match.
Chardonnay, Whistling Ridge Vineyard, Goodfellow Family Cellars, 2017, Ribbon Ridge, Willamette, $38
Marcus Goodfellow has been a fixture in Oregon wine for decades, he left his job at the Heathman to found Goodfellow Family Cellars in 2002. Goodfellow is a member of the Deep Roots Coalition, a group of producers who exclusively make wine from dry-farmed vines, with the belief that dry-farming forces the roots to grow deep and better express vineyard terroir. The Whistling Ridge vineyard sits on the top of the Ribbon Ridge AVA and is made up of marine sedimentary soils that are between 40-50 million years old. The Chardonnay grapes are sourced from a 1 acre block and fermented and aged in neural oak for 20 months. It smells of lemons, quince, white flowers and wet rocks. The mid palate has great weight and can handle the stuffed quail well. It may be a classically red dish, but this Chard will do just fine!
