Beetroot Market and Deli is a contemporary Jewish specialty deli and food store concept, the first of its kind in Portland, Oregon. At Beetroot, Owner and Executive Chef, Sonya Sanford specializes in Jewish food from around the world, and cooks with seasonal and local ingredients.
Guests will find a unique take on “Jewish food 2.0,” featuring traditional Jewish deli food, as well as Israeli touches, Slavic twists and North African accents.
It is Sanford’s belief that Jewish culinary traditions merge beautifully with a wide array of other distinctive cultural cuisines. Whether it’s latkes made with daikon, kugel made with peaches, or rice pudding made with coconut milk and cardamom, she is constantly exploring how Jewish dishes have evolved to incorporate the influences and ingredients of countries from around the world (I’ve attached a copy of the menu below). Beetroot is committed to sustainable ingredients and practices, inclusivity, and supporting other minority-run businesses and vendors.
Sonya teamed up with local designer Daniel Goers to create a space that is reminiscent of a classic East Coast deli featuring 100 percent reclaimed Douglas Fir and mosaic tile at the entrance. Beetroot also features a market and deli counter that is filled with deli sandwiches, Russian potato salad and more!
