Beer Washed Cheeses

A subsection of washed rind cheese, beer washed cheeses originated in Belgium and Italy, with monks mopping cheeses with their beers. As with traditional salt brine, this method was initially used to protect the rind of soft cheeses. With the addition of beer to the brine, cheese makers noticed earthy, meaty flavors developing in these normally soft, mild cheeses, and a new tradition was born. These cheeses can now be found across Europe and the US, with creameries using local beers to add unique flavors to their cheeses, ranging from floral, bitter notes of an IPA to nutty, toasty wash of Porter. This week we are highlighting some of our favorite domestic versions, all available now!

New Arrival!!

Boxcarr Creamery Lissome (North Carolina) Emulated after Taleggio, this Creamery is known and celebrated for their soft cheeses. Square shaped Lissome is washed in an Italian farmhouse ale, giving off notes of of wild yeast and dried fruit.

Briar Rose Creamery Saucy Nipper (Dundee, Oregon) Washed in Pfriem’s Strong Blonde Ale, this small format beauty is fruity and yeasty with a people-pleasing level of funk.

Tulip Tree Creamery Foxglove (Indiana)
Washed with a local Porter from Three Wise Men, this double cream is giving off Epoisses vibes with its pungency and bright orange rind

Sartori Raspberry Bellavitano (Wisconsin)
Technically a beer soaked cheese rather than washed rind, this Parmesan-Cheddar hybrid is submerged is New Glarus’ raspberry Lambic style ale, imparting fruity tart flavors on the rind.

Thursday Wine Tasting

David Rounds of American Northwest Distributors will be pouring some exceptional wines for us this Thursday. You will have the opportunity to try a beautiful vintaged Cava, a delicious yet shockingly affordable Chablis, and two distinct Loire Valley reds. These wines are perfect for sipping on these last days of summer. We hope you can join us!

  • 2017 Famille Ogereau, Anjou L’Anjouee, Cabernet Franc/Grolleau Noir/Pineau d’Aunis, Loire Valley, France
  • 2017 Domaine Serol, “Eclat de Granite,” Côte Roannaise, Loire Valley, France

Buffalo Mozzarella – An extremely delicious and decadent mozzarella made from the milk of Italian water buffalo

Black Sheep Creamery’s Fresh Brebis – A seasonal favorite that is only available from March through late summer. This rich and crumbly cheese is the perfect addition to any salad or baked in a fruit tart or quiche!
