Beaufort d’Ete Cheese is Back
We are excited to have Beaufort d’été back in the case! Beaufort is a raw milk alpine cheese made in the Haute-Savoie region of France. The Beaufort that we have in is a summer milk Beaufort, or d’été, meaning that
it is made exclusively from the milk of cows that have grazed on wild alpine pastures during the summer months. Traditionally, Beaufort is made in copper vats in chalets, or mountain huts. In order to transport the cheese down the mountain passes, the wheels were made in extremely large formats. Wheels of Beaufort weigh between 80 and 130 pounds. The wheel of Beaufort d’ete we have now has been aged approximately one year. This cheese pairs great with crisp fall apples or a nice Pinot Noir.
French & Italian Wine Tasting

We invite you to join us for a mini-tour through France and Spain this evening. Tony Raynor of Galaxy Wines will be hosting tonight’s tasting of French and Italian wines.
Here is what he will be pouring:
Val de Mer, Brut Non Dosé, Burgundy, France
This sparkling wine is made from 100% Chardonnay that is sourced from vines that are at least 25 years old. This wine has an assertive minerality from the vineyard’s limestone and clay soils.
Chateau de Roquefort, Petit Salé Blanc, Provence, France, 2017
“Petit Salé” (little salty) is the local name given to the Clairette grape, which makes up 60% of this French white blend. The grape gets this name because of the small white dots on its skin in addition to its delicate salinity. The other grapes in the blend are Ugni Blanc and Vermentino. This wine is pale in color and has notes of white peach and citrus.
Muga Rosado, Rioja, Spain, France, 2017
The delicate salmon pink hue of this rose is gives it an elegant appearance. A blend of Garnacha, Viura, and Tempranillo creates a crisp and balanced rosé. Notes of strawberry and apricot on the nose are followed by notes of citrus on the palate.
Familia Diaz Bayo, Roble, Ribera del Duero, Spain, 2016
This organic Tempranillo is from La Vinota and Rubial, two vineyards located in the Ribera del Duero region of Spain. This classic red wine is aged for 12 months in French oak and an additional 12 months in the bottle. The extreme altitude and high mineral soils combined with attentive wine making create this mineral driven balanced wine.
