Fall Tasting Menu and More at Castagna
The weather is changing and we’re delighted to share a new seasonal menu with you at Castagna. This menu features an array of Pacific Northwest ingredients from some of our favorite local farms, including Viridian and Groundworks farms, as well as produce from our own garden.
Some of our favorite dishes include Braised Beets with Treviso and Herbs from our garden, Flat Iron with Locally Foraged Matsutake, and Foie Gras with Apple Quick Bread and a Concord Grape Veil.
Another favorite is the Dungeness Crab with Cabbage, Sake Less, and Buttermilk. We receive live crabs once or twice each week from the Oregon coast. The cabbage, from Your Kitchen Garden in Canby, is sliced thin, sautéed in butter, and topped with crab and a sauce made from buttermilk and sake lees—the “grape must” of sake that adds a wonderfully fermented, tangy flavor to this dish.
