Ah, the season of symphony and change is upon us. After a fairly flawless summer, we embrace the electric energy of Portland’s last sigh before winter with our new cocktail menu. As always, we celebrate the harvest that brings us so many fantastic options. The elegiac high notes of succulently seasonal citrus; the warmth of stone fruit in its many forms; the onset of so many hearty spices.
This menu sees the return of so many of our greatest hits set to warm and inspire. But we have been hard at work on an array of ingredients to accompany days of lengthening shadows. Our salted grapefruit cordial simply sings in Birth of Tragedy, a punch with Greek Assyrtiko wine, meyer lemon, basil-infused gin, and Fever Tree’s Mediterranean tonic. A fennel-walnut-maple soda bounces with Pommeau de Normandie in Goodnight Moon. Center of Gravity features an outstanding pear-chamomile shrub, alongside Hayman’s Old Tom gin, Amaro Montenegro, & a farmhouse ale. And we round it all out with a graham cracker-infused bourbon, nestled in a glass with LaCuesta vermouth, Cynar, Frangelico, & chocolate bitters.
Of course, our palate takes on a deeper note, as we shift down from the bright, long drinks of summer to the soothing, rich tones of apple brandy, sherry, cognac and dark rums. Oh, and a whiskey or two, to be sure.
