Appleby’s Cheshire
The Appleby family has been making farmstead cheese in Shropshire, England since 1952. The Appleby’s are the only cheesemakers who continue to make the region’s traditional clothbound Cheshire. During the 1980s grocery stores began pressuring cheesemakers to wax their cheeses, but the Appleby family stood strong and continued making Cheshire in the traditional way, binding the wheels in cloth. This cheese is made from the raw milk of Friesian cows that graze on the mineral rich pastures of the Cheshire plain. The pale orange color is created by the addition of annatto, a natural colorant. The cheese is firm, yet flaky. It is grassy and lactic with a mouthwatering finish.
